It's just a guess, but in good baking practice, maybe one followed a strict order to assemble an apple pie including the cutting and arranging of the apple. The idea of something being ready before it is put in service is implicit in the metaphor; one can envision a pie being imagined before it is sent to oven. <br /><br />True, any pie requires careful assembly but apple pie is pre-eminent amongst the fruit pies in Anglo-American cookery.<br /><br />I noted the direction to use beer as a good option to moisten the pie. This ties into something Andrew Campbell noted in The Book Of Beer (1956), that brown ale is a traditional accompaniment to apple pie.<br /><br />I read in an earlier entry here some interesting suggestions in a 1930's American article on using beer in cookery. The journalist seemed to regard the idea as novel. In truth though, English and American cookery disclose countless examples of beer being used this way.
